A keen traveller, Pascal Barbot is a French chef who constantly draws on his many travels to mix and share as many products and techniques as possible.
Born in 1972 in Vichy, he inherited this intimate connection with the land and the seasons from his childhood. He passed the CAP, BEP and Bac Pro, before taking his first steps in Auvergne, in very simple restaurants, then in a buron converted into a restaurant in the Chaudefour Valley, where he worked during all his holidays. He ended up in a wonderful family where he learned about local cuisine, in the heart of the Auvergne Volcanoes Natural Park, in a protected reserve. It was here that he met his mentor, Éric Vallet, the park warden and above all a professional botanist.
After the Auvergne landscapes, he moved to London and became a commis in the restaurant Les Saveurs run by Joël Antunes, a Michelin star. There, Pascal Barbot discovered the hierarchy in the kitchen, and then haute gastronomy, he who had only known local cuisine. He returned to France and practised his skills at Troisgros in Roanne.
During his military service, he was the cook for the Admiral of the Pacific, and in New Caledonia he discovered unexpected products and flavours.
On his return in 1993, he settled in Paris at L’Arpège, working with Alain Passard at the bottom of the ladder and finishing as second chef five years later.
He then worked for two years in Sydney at the Ampersand restaurant, before returning to the Lapérouse in Paris.
Finally, in 2000, Pascal Barbot decided to settle down and, with his former partner from l’Arpège Christophe Rohat, opened his restaurant l’Astrance on the banks of the Seine, which has been awarded three Michelin stars since 2007. The restaurant has just twenty-five covers, but is still a renowned address.
Pascal Barbot’s cuisine, inspired by exoticism and travel, combines French savoir-faire and creativity. In 2019, L’Astrance will be moving to Le Jamin, Joël Robuchon’s historic restaurant.
